Eat Well

One of the best ways I know to thank your body, is to feed it good, good food.

So I thought I’d share this “recipe”.  I should mention that I don’t really do alot of measuring, I’m a taste-as-you-go kinda cook, so these measurements are estimations.

A fresh take on a classic salad



2 bartlett pears
3 kiwi

2 limes

1/2 lb. strawberries
2 granny smith apples
pineapple – i got the pre cut pineapple in the bowl
honeydew melon – ” “
1 pomegranate

wash, and cut your fruit. peel the pears, and kiwi. mix in a bowl. be sure not to handle the fruit too much, it’s pretty juicy.  Add juice of 1/2 lime to the fruit to keep it from browning.

Ginger-Citrus Salad Dressing
1/2 cup sugar3/4 cup water
2 TBSP ground ginger (fresh ginger would definitely be better, and you’d have to use less)
juice from 1 lime
juice from 1 clementine

Simmer ingredients over medium heat. You’re going for a simple syrup here. Seed your pomegranate, and put the seeds in the syrup.
Simmer 3-5 minutes.

Strain seeds from syrup. Put seeds in salad. Add about 1/4c of the syrup to the salad and toss gently.

Serve the remaining syrup as a salad dressing, that you can spoon over your salad, as desired.
